  • 1 lb ground chicken
  • 1 egg
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, peeled and diced
  • 2 large sweet potatoes
  • 1 Tb olive oil
  • 2 oz cheddar cheese, freshly grated
  • 1/2 c fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 1-inch piece of ginger, grated
  • 1 tsp soy sauce
  • 2 Tb butter
  • 2 Tb maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/2 tsp nutmeg
  • Salt and cayenne to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake sweet potatoes on a baking sheet for 60–75 minutes until tender.
  3. In a sauté pan, heat 1 Tb olive oil and cook diced onion and apple with a pinch of salt for about 5–7 minutes; deglaze with soy sauce and set aside to cool.
  4. Combine ground chicken, egg, breadcrumbs, grated cheddar cheese, parsley, walnuts, ginger, salt, pepper, cayenne, and cooled onion/apple mixture in a mixing bowl; mix until just combined.
  5. Form into 14–16 meatballs and place on a greased baking sheet. Bake for 15 minutes or until cooked through.
  6. Peel cooked sweet potatoes and mash with butter, maple syrup, spices, salt, and cayenne until smooth.
