  • 2 tablespoons apple cider
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 12 tablespoons apple cider

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it reaches ¼ cup; let cool.
  2. Brown the butter in another saucepan over low heat, then cool.
  3. Whisk together flour, baking powder, baking soda, cornstarch, spices, and salt in one bowl.
  4. In a separate bowl, combine cooled brown butter and sugars; mix in egg, reduced cider, and vanilla.
  5. Gradually mix dry ingredients into wet ingredients until just combined; let rest.
  6. Preheat oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  7. Scoop dough onto the sheet and bake for 9–11 minutes until edges are set.
  8. Brush cookies with melted butter and coat in cinnamon sugar; drizzle with glaze after cooling.
