- ½ cup store-bought caramel sauce
- Pinch of flaky sea salt (optional)
Instructions
- Reduce 1 cup of apple cider in a saucepan over medium heat until it reaches ¼ cup. Let it cool.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- In another bowl, beat softened butter and brown sugar until fluffy; add egg and vanilla then mix in cooled apple cider.
- Gradually combine dry ingredients with the wet mixture alternating with milk until just mixed.
- Drop tablespoon-sized rounds onto baking sheets and bake for 10–12 minutes or until firm.
- Prepare the buttercream by beating softened butter with powdered sugar, cooled apple cider reduction, vanilla, and salt until fluffy.
- Assemble by spreading buttercream on one cookie half, drizzling caramel over it, then topping with another cookie half.
