  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled, diced apples
  • ½ cup brown sugar
  • ½ cup flour
  • 1 tsp cinnamon
  • ¼ cup cold butter, cubed
  • 1 apple, peeled and finely diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light; add eggs one at a time, then vanilla and sour cream/yogurt.
  4. Gradually combine dry ingredients with the wet mixture; gently fold in diced apples.
  5. Pour into the prepared pan and prepare the crumb topping by combining brown sugar, flour, cinnamon, and cubed butter until crumbly; sprinkle over batter.
  6. Bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the drizzle, cook diced apple with butter, brown sugar, cinnamon, and water until thickened; pour over cooled cake before serving.
