  • 150 g unsalted butter (melted)

  • 50 g brown sugar – for streusel topping
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, and sliced)
  • 50 g brown sugar – for apple filling
  • 1 teaspoon ground cinnamon – for apple filling
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened to room temperature)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon – for cheesecake filling
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the biscoff cookies and mix them with melted butter. Press into a springform pan and bake for 10 minutes.
  2. For the streusel topping, combine melted butter, flour, brown sugar, and rolled oats until crumbly; set aside.
  3. Toss sliced apples with brown sugar, ground cinnamon, and cornstarch in a bowl.
  4. In a large mixing bowl, beat cream cheese with granulated sugar until smooth. Add Greek yogurt, vanilla extract, ground cinnamon, ginger, nutmeg, and eggs one at a time until fully combined.
  5. Layer the apple mixture over the cooled crust, pour cheesecake filling on top, and sprinkle with streusel.
  6. Bake for 75 minutes or until set around edges but slightly jiggly in the center. Cool gradually before refrigerating for at least 4 hours.
