  • 1 tbsp grated ginger

  • 2 tbsp soy sauce
  • 2 English cucumbers
  • 1 shallot (thinly sliced)

Instructions

  1. Wash the English cucumbers thoroughly and slice them into thin rounds (about 1/8-inch thick). Peel and thinly slice the shallot.
  2. In a medium bowl, combine seasoned rice vinegar, sugar, grated ginger, sea salt, dried red chile flakes, and soy sauce. Stir until the sugar and salt dissolve.
  3. Place sliced cucumbers and shallots in a large bowl or jar. Pour the pickling brine over them, ensuring all pieces are submerged.
  4. Cover the bowl or seal the jar and refrigerate for at least 2 hours; overnight is recommended for maximum flavor.
