  • 1-inch piece of ginger, grated
  • 2 dried red chilies (optional, for extra heat)
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Mix together the ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala in a small bowl.
  2. In a large deep pan, heat oil over medium heat and sauté chopped onions until golden brown (about 10 minutes). Add minced garlic, grated ginger, and dried red chilies; cook until fragrant.
  3. Increase heat and brown the beef pieces for about 5-7 minutes.
  4. Add the spice mix to the pan and toast for about 30 seconds.
  5. Stir in pureed tomato, tomato paste, salt, black pepper, and vinegar; cook for about 5 minutes.
  6. Pour in beef broth or water; bring to a boil then reduce heat to low. Cover and simmer for 60-75 minutes until beef is tender.
