- 1 lb dried pinto beans
- 4 cups chicken stock
- 1 bottle beef broth (preferably Mexican)
- 1 lb turkey bacon (or alternative)
- 2 jalapeño peppers
- 1 medium onion
- Fresh cilantro
- Tomatoes
- Ground cumin
- Dried oregano
- Salt (to taste)
- Black pepper (to taste)
- Water (as needed)
Instructions
- Soak the dried pinto beans in water overnight. Drain before cooking.
- In a large pot, combine soaked beans with chicken stock, beef broth, water, and turkey bacon. Simmer on low heat for about 1½ hours.
- While beans cook, sauté chopped onion, jalapeños, and minced garlic in a skillet until softened.
- Add the sautéed vegetables to the pot along with cilantro, tomatoes, cumin, oregano, salt, and pepper.
- Continue simmering for an additional 1½ hours until beans are tender. Adjust consistency with water if needed.
