Ingredients

  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth (preferably Mexican)
  • 1 lb turkey bacon (or alternative)
  • 2 jalapeño peppers
  • 1 medium onion
  • Fresh cilantro
  • Tomatoes
  • Ground cumin
  • Dried oregano
  • Salt (to taste)
  • Black pepper (to taste)
  • Water (as needed)

Instructions

  1. Soak the dried pinto beans in water overnight. Drain before cooking.
  2. In a large pot, combine soaked beans with chicken stock, beef broth, water, and turkey bacon. Simmer on low heat for about 1½ hours.
  3. While beans cook, sauté chopped onion, jalapeños, and minced garlic in a skillet until softened.
  4. Add the sautéed vegetables to the pot along with cilantro, tomatoes, cumin, oregano, salt, and pepper.
  5. Continue simmering for an additional 1½ hours until beans are tender. Adjust consistency with water if needed.
