  • 1 lb Steak (chuck)
  • 3 Russet potatoes
  • 2 cups Precooked corn meal (Harina PAN brand)
  • 1/4 cup White vinegar
  • 1/2 cup Scallions (finely chopped)
  • 1/4 cup Red onion (diced)
  • 1/4 cup Red bell pepper (diced)
  • 3 Garlic cloves (minced)
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • Salt and pepper to taste
  • 1 Tablespoon Neutral vegetable oil
  • 2 cups Water
  • 1 teaspoon Salt
  • 1 teaspoon Better than bouillon (Chicken bouillon)
  • 1 Tablespoon Cornstarch

Instructions

  1. Prepare the filling by boiling and mashing the russet potatoes. In a frying pan, cook diced steak until browned, then add onions, bell peppers, garlic, spices, and hot sauce. Combine with mashed potatoes.
  2. Make the dough by mixing precooked corn meal, water, salt, bouillon, cornstarch, and vegetable oil until smooth. Let it rest for about 10 minutes.
  3. Form empanadas by rolling out dough into circles and adding a spoonful of filling on one half. Fold over and seal edges.
  4. Fry in heated oil until golden brown on both sides.
