Ingredients
- 1 lb Steak (chuck)
- 3 Russet potatoes
- 2 cups Precooked corn meal (Harina PAN brand)
- 1/4 cup White vinegar
- 1/2 cup Scallions (finely chopped)
- 1/4 cup Red onion (diced)
- 1/4 cup Red bell pepper (diced)
- 3 Garlic cloves (minced)
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- Salt and pepper to taste
- 1 Tablespoon Neutral vegetable oil
- 2 cups Water
- 1 teaspoon Salt
- 1 teaspoon Better than bouillon (Chicken bouillon)
- 1 Tablespoon Cornstarch
Instructions
- Prepare the filling by boiling and mashing the russet potatoes. In a frying pan, cook diced steak until browned, then add onions, bell peppers, garlic, spices, and hot sauce. Combine with mashed potatoes.
- Make the dough by mixing precooked corn meal, water, salt, bouillon, cornstarch, and vegetable oil until smooth. Let it rest for about 10 minutes.
- Form empanadas by rolling out dough into circles and adding a spoonful of filling on one half. Fold over and seal edges.
