  • 2 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 1 large piece lemon peel
  • 1 large piece orange peel
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (caster sugar)
  • Additional sugar (for caramelization)
  • Optional: Fresh fruit or berries for decoration

Instructions

  1. Heat the milk in a heavy-based saucepan over medium heat. Add lemon peel, orange peel, and cinnamon stick. Bring to a simmer and remove from heat.
  2. Make a slurry by dissolving cornstarch in a splash of water.
  3. In a bowl, whisk egg yolks with sugar until pale yellow. Stir in the cornstarch slurry and add a splash of hot milk.
  4. Remove citrus peels from the milk and slowly pour the egg mixture into the hot milk while whisking continuously.
  5. Return to low heat, whisking until thickened to pudding-like consistency.
  6. Pour custard into ramekins and cover each with plastic wrap to prevent skin forming.
  7. Chill in the refrigerator for at least 4 hours or overnight.
  8. Before serving, sprinkle sugar on top of each custard and caramelize using a blowtorch or under an oven's broiler.
  9. Optional: Garnish with fresh fruit before serving.
