  • 2 soft- or medium-boiled eggs
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 1 avocado, sliced
  • 1 tsp olive oil
  • 1 tsp everything bagel seasoning
  • Salt & pepper to taste

Instructions

  1. Boil the Eggs: Bring water in a pot to a boil. Add eggs gently and cook for 7-8 minutes for a jammy center. Cool in cold water, peel, and slice.
  2. Sauté the Veggies: Heat olive oil in a skillet over medium heat. Sauté mushrooms for 4-5 minutes until browned. Add broccoli and cook until tender, then set aside. Blister cherry tomatoes in the same pan for 2-3 minutes.
  3. Assemble the Bowl: On a plate or bowl, layer sliced avocado, sautéed mushrooms, broccoli, tomatoes, and halved eggs.
  4. Season & Serve: Sprinkle everything bagel seasoning over the top and season with salt and pepper. Serve warm.
