Ingredients

  • 1 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • 1 teaspoon sugar
  • ½ cup white onion (minced)
  • Salt to taste
  • 4 large russet potatoes or 5 large red potatoes
  • Salt and pepper to taste
  • 1 red bell pepper (julienned)
  • 1 cup julienned carrot sticks
  • 1 stalk celery (small dice)
  • 1 teaspoon Dijon mustard or yellow mustard
  • ¼ cup fresh chives (minced)
  • 2 tablespoons fresh parsley (minced)
  • Dash of celery seed

Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil.
  2. Peel and cube the potatoes if using russet; leave them whole if using red potatoes.
  3. Add the potatoes to the boiling water and cook for about 15 minutes until tender.
  4. Drain the potatoes and let them cool.
  5. In a mixing bowl, whisk together mayonnaise, red apple vinegar, sugar, minced onion, and salt until smooth.
  6. Adjust seasoning with salt and pepper as desired.
  7. In a large mixing bowl, add cooled potatoes along with diced celery, julienned bell pepper, carrot sticks, chives, parsley, mustard, and celery seed.
  8. Pour the dressing over the mixture and gently fold until everything is well coated.
  9. Cover the bowl with plastic wrap or transfer to an airtight container.
  10. Refrigerate for at least one hour before serving to allow flavors to meld.
