- 1 pint cherry or grape tomatoes
- 8 oz feta cheese
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Cooked rice, quinoa, or couscous (for serving)
Instructions
- Preheat your oven to 400°F (200°C) and lightly oil a baking dish.
- Place the block of feta in the center of the dish, surrounded by cherry tomatoes. Drizzle with 2 tablespoons of olive oil, then season with oregano, salt, and pepper.
- Season chicken breasts with salt, pepper, and remaining olive oil; nestle them in the dish alongside the tomatoes and feta.
- Bake uncovered for 30–35 minutes until chicken reaches an internal temperature of 165°F (74°C) and tomatoes have burst.
- Remove from oven; mash the feta and tomatoes together to create a creamy sauce. Stir in minced garlic while warm.
- Slice or shred the chicken and serve over cooked grains, topped with the sauce.
