  • 4 boneless, skinless chicken breasts (about 1 ½ lbs total)
  • 1 pint cherry or grape tomatoes
  • 8 oz feta cheese
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Cooked rice, quinoa, or couscous (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a baking dish.
  2. Place the block of feta in the center of the dish, surrounded by cherry tomatoes. Drizzle with 2 tablespoons of olive oil, then season with oregano, salt, and pepper.
  3. Season chicken breasts with salt, pepper, and remaining olive oil; nestle them in the dish alongside the tomatoes and feta.
  4. Bake uncovered for 30–35 minutes until chicken reaches an internal temperature of 165°F (74°C) and tomatoes have burst.
  5. Remove from oven; mash the feta and tomatoes together to create a creamy sauce. Stir in minced garlic while warm.
  6. Slice or shred the chicken and serve over cooked grains, topped with the sauce.
