  • 1 cup Kalamata olives
  • 2 bell peppers
  • 3/4 cup olive oil
  • 1/3 cup red apple vinegar
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 shallot
  • 1/2 cup fresh herbs (like parsley or basil)

  • black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cook the orzo in a large pot of salted boiling water according to package directions until al dente. Drain and rinse under cold water.
  2. Season chicken tenders with salt and pepper. Cook in a skillet over medium heat with olive oil for about 6-7 minutes per side until fully cooked; let cool before slicing.
  3. In a bowl, whisk together olive oil, vinegar, lemon juice, honey, mustard, shallot, herbs, salt, pepper, and red pepper flakes for the dressing.
  4. In a large bowl, combine cooked orzo with chopped vegetables and sliced chicken. Pour dressing over the salad and toss gently.
