  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cup mashed bananas (about 4 medium)
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan by spraying it with baking spray and lining it with parchment paper.
  2. In a stand mixer, beat together cream cheese and instant pudding mix until smooth. Add an egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk flour, baking soda, and salt together.
  4. In the stand mixer, combine mashed bananas and sugar, mixing until blended. Add vegetable oil and eggs one at a time, scraping down the bowl as needed.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Pour half of the banana batter into the prepared pan, followed by the cream cheese filling, then top with remaining banana batter.
  7. Bake for 45-55 minutes or until golden brown and a toothpick comes out clean from the center.
