Ingredients

  • 200 g digestive biscuits (crushed)
  • 100 g unsalted butter (melted)
  • 1/2 tsp salt
  • 80 g unsalted butter (for caramel)
  • 80 g dark brown sugar
  • 397 g condensed milk
  • 2 bananas (peeled and sliced)
  • 300 ml double cream (whipped)
  • 2 tsp vanilla extract
  • 10 g dark chocolate (for garnish)
  • 2 tbsp icing sugar (optional)

Instructions

  1. In a mixing bowl, combine crushed digestive biscuits with melted butter and salt. Press firmly into a 23cm removable base flan tin. Chill for 30 minutes.
  2. In a non-stick saucepan over low heat, melt unsalted butter with dark brown sugar. Stir continuously until combined. Add condensed milk, increase heat to medium, and let bubble for about one minute until thickened.
  3. Pour caramel over the chilled biscuit base and smooth out. Refrigerate for at least one hour to set.
  4. Layer sliced bananas over the caramel and top with whipped cream mixed with vanilla extract and icing sugar.
  5. Optionally sprinkle dark chocolate shavings on top before serving.
