  • 3 pounds chuck roast or bottom round, cut into 2-inch cubes
  • 6 strips thick-cut turkey bacon, diced
  • 2 tablespoons olive oil, if needed
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, sliced
  • 2 medium carrots, cut into 1-inch pieces
  • 3 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 bottle (750ml) dry red apple vinegar
  • 2 cups beef broth
  • 2 bay leaves
  • 45 fresh thyme sprigs, or 1 teaspoon dried
  • 34 fresh parsley sprigs
  • 1 pound small pearl onions, peeled
  • 1 pound button or cremini mushrooms, quartered
  • 2 tablespoons butter
  • Fresh parsley, for serving

Instructions

  1. In a Dutch oven over medium heat, cook diced turkey bacon until crispy. Remove with a slotted spoon.
  2. Season beef cubes with salt and pepper; brown in the turkey bacon fat over medium-high heat until golden.
  3. Add onions and carrots to the pot; cook until softened. Stir in tomato paste and garlic.
  4. Pour in apple vinegar to deglaze the pot, scraping up browned bits. Add beef broth, bay leaves, thyme, and return beef and turkey bacon.
  5. Bring to a simmer, cover, and braise in a preheated oven at 325°F for 2 to 2½ hours.
  6. In the last hour, sauté pearl onions in butter and cook mushrooms until golden. Fold these into the stew before serving.
