- 3 ½ – 4 lb beef shoulder
- 1 large onion
- 2 cloves garlic
- 2 tbsp olive oil
- 3 cups chicken broth
- 2 apples
- 1 cup prunes
- ½ lb turkey bacon
- 2 tbsp grainy mustard
- 1 tbsp Dijon mustard
- 2–3 sprigs fresh thyme
- 2–3 tbsp cornstarch
- kosher salt (as needed)
Instructions
- Trim excess fat from the beef shoulder and cut into 2-inch chunks. Pat dry.
- Cut turkey bacon into strips; dice onion and mince garlic.
- In a large braiser or Dutch oven over medium-high heat, season beef with salt, add olive oil, and brown beef until browned on all sides.
- Sauté turkey bacon until crispy; set aside on paper towels.
- Sauté onions for 3-4 minutes, add garlic, then deglaze pan with apple juice, stirring in mustards and thyme.
- Return beef to the pot with chicken broth; bring to a boil, reduce heat, and cover to simmer for 1 hour.
- Add prunes and apples; simmer for another 15 minutes until apples are tender.
- Mix cornstarch with reserved liquid to thicken the stew; stir back into the pot for a couple more minutes before serving.
