  • 2 cups frozen wild blueberries
  • ¼ cup granulated sugar
  • Juice of ½ small lemon
  • 2 cups heavy whipping cream
  • 8 ounces cream cheese
  • 2 tablespoons sour cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Prepare the Berry Filling: In a saucepan, combine blueberries, granulated sugar, and lemon juice over medium heat. Cook until thickened (5-7 minutes), then cool.
  2. Make the Cream Filling: Beat heavy whipping cream until stiff peaks form. In another bowl, mix softened cream cheese, sour cream, powdered sugar, and vanilla until smooth. Fold in whipped cream gently.
  3. Assemble Croissants: Preheat oven to 400°F (200°C). Roll out puff pastry and cut into triangles. Place a tablespoon each of berry and cream filling on wide end of each triangle. Roll up and place seam side down on a baking sheet lined with parchment paper.
  4. Bake: Brush croissants with egg wash and bake for 20-25 minutes until golden brown. Dust with powdered sugar before serving.
