  • 1/2 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1 cup oil
  • 1¼ cups granulated sugar
  • 1 cup brown sugar
  • 1 Tbsp vanilla extract
  • 3 eggs
  • 2½ cups grated zucchini
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or two smaller pans.
  2. In a medium bowl, whisk together flour, salt, baking powder, baking soda, and spices.
  3. In a large bowl, mix oil, granulated sugar, brown sugar, vanilla extract, and eggs until well combined.
  4. Gradually add dry ingredients to wet ingredients and stir gently until just combined. Fold in grated zucchini and chopped walnuts.
  5. Pour the batter into the prepared pan(s) and bake for about 50–60 minutes or until golden brown and a toothpick inserted comes out clean.
