  • 1/2 tsp baking soda

  • 1 1/2 tsp ground cinnamon

  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/4 cup unsweetened applesauce or Greek yogurt
  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the oil, brown sugar, granulated sugar, eggs, applesauce (or Greek yogurt), and vanilla until smooth.
  4. Gently fold in the grated zucchini to the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. If desired, fold in chocolate chips or nuts at this stage.
  7. Pour the batter into the prepared loaf pan and bake for about 55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
