Ingredients
- 5–6 medium sweet potatoes, peeled & cut into thin medallions
- ¼ cup unsalted butter or vegan alternative
- ¼ cup brown sugar
- ½ cup water
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ cup chopped pecans or walnuts
- ½ cup mini vegan marshmallows
Instructions
- Preheat oven to 400°F (200°C).
- Peel and slice sweet potatoes into thin medallions; layer them in a baking dish.
- In a small saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt until melted into a smooth sauce.
- Brush three-quarters of the sauce over the sweet potato layers. Cover with foil and bake for 45–50 minutes.
- Remove foil; drizzle remaining sauce on top and sprinkle with pecans and mini marshmallows.
- Broil for 1–2 minutes until marshmallows are toasted.
- Let cool for 10–15 minutes before serving.
