Ingredients
- 1 lb boneless skinless chicken breast
- 6 cups baby spinach
- 1 pint blackberries
- 2 kiwi, sliced
- 1/4 cup sliced red onion
- 1 avocado, sliced
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons chopped walnuts
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry basil leaves
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 tablespoon avocado oil
- 1 tablespoon dijon mustard
- 1 teaspoon honey
- Salt & pepper to taste
Instructions
- Season the chicken with garlic powder, basil, black pepper, and salt.
- Heat avocado oil in a large skillet over medium-high heat. Cook chicken for 4-6 minutes per side until no longer pink. Let rest before slicing.
- Whisk together balsamic vinegar, olive oil, mustard, honey, basil, garlic powder, salt, and pepper to create the dressing.
- In a large bowl, combine spinach, blackberries, kiwi slices, red onion, avocado slices, walnuts, and sliced chicken.
