  • 1 lb boneless skinless chicken breast
  • 6 cups baby spinach
  • 1 pint blackberries
  • 2 kiwi, sliced
  • 1/4 cup sliced red onion
  • 1 avocado, sliced
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons chopped walnuts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry basil leaves
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon avocado oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • Salt & pepper to taste

Instructions

  1. Season the chicken with garlic powder, basil, black pepper, and salt.
  2. Heat avocado oil in a large skillet over medium-high heat. Cook chicken for 4-6 minutes per side until no longer pink. Let rest before slicing.
  3. Whisk together balsamic vinegar, olive oil, mustard, honey, basil, garlic powder, salt, and pepper to create the dressing.
  4. In a large bowl, combine spinach, blackberries, kiwi slices, red onion, avocado slices, walnuts, and sliced chicken.
  5. Serve with dressing on the side.
