Ingredients

  • 1 lb. Mafaldine noodles (or fettuccini/linguini noodles)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper to taste
  • 2 tablespoons smoked paprika (regular paprika works too)
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken to an even 1/4 inch thickness. Rub them with olive oil and season liberally on both sides with about 2-3 tablespoons of blackened seasoning.
  2. Heat a skillet over medium-high heat. Add 2 tablespoons of olive oil to the pan. Cook chicken for 3-4 minutes until it has a dark amber color on one side. Flip just once.
  3. Reduce heat to low. Add 2 tablespoons of butter into the skillet along with 2 teaspoons of minced garlic. Allow this mixture to melt into the chicken as it cooks for another 5-6 minutes until it reaches an internal temperature of 165 degrees.
  4. Remove cooked chicken from the skillet and place it on a plate tented with foil to rest before slicing.
  5. In the same skillet over medium heat, add remaining butter. Once melted, add in remaining minced garlic and sauté for 1-2 minutes until fragrant.
  6. Stir in heavy cream and 2-3 teaspoons of blackened seasoning. Bring to a simmer allowing it to thicken slightly over about 5 minutes.
  7. Meanwhile, cook noodles according to package instructions until al dente, reserving about 1/3 cup of pasta water before draining.
  8. Add parmesan cheese into the alfredo sauce and stir until fully melted. Taste and adjust seasonings as needed.
  9. Pour reserved pasta water into the alfredo sauce then mix in cooked noodles. Top with sliced chicken and sprinkle additional cajun seasoning if desired before serving.
