- 680g chicken breasts (cut into 1-inch pieces)
- 30ml olive oil
- 4 tablespoons butter (divided)
- 4 cloves garlic (chopped)
- 1 teaspoon cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 60ml chicken broth
- Juice of 1 lemon
- Fresh chives (for garnish)
- 454g linguine
- 90g heavy cream
- 100g grated parmesan cheese
- Salt and pepper to taste
Instructions
- Season the chicken pieces with cajun seasoning, paprika, and black pepper in a mixing bowl.
- Heat olive oil and 2 tablespoons of butter in a non-stick skillet over medium-high heat. Cook the seasoned chicken for about 6-8 minutes until golden brown. Remove from skillet.
- In the same skillet, melt the remaining butter, sauté garlic until fragrant, then add chicken broth and lemon juice. Let simmer for 2-3 minutes.
- Return cooked chicken to the skillet, stirring to coat in the sauce.
- Meanwhile, cook linguine according to package instructions; reserve some pasta water before draining.
- In a large pot, melt butter over medium heat, sauté garlic, add cream and bring to a boil. Stir in parmesan cheese until smooth.
- Mix drained linguine into cream sauce; add reserved pasta water as needed for desired consistency.
