  • 2 large russet potatoes
  • 2 tablespoons butter
  • ¼ cup heavy cream
  • 4 slices cooked turkey bacon (crumbled)
  • ½ cup shredded cheddar cheese
  • 4 large eggs
  • 2 teaspoons canola oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • salt and pepper (to taste)
  • chives (minced)

Instructions

  1. Preheat your oven to 350°F.
  2. Prick the potatoes several times with a fork and coat them with canola oil and salt.
  3. Bake the potatoes for about 1 hour until fork-tender.
  4. Slice each potato in half lengthwise and scoop out the flesh into a bowl.
  5. Mix the scooped potato with butter, heavy cream, turkey bacon, cheddar cheese, garlic powder, onion powder, black pepper, and salt until smooth.
  6. Spoon the filling back into the potato skins and create wells for the eggs.
  7. Crack an egg into each well, season with salt and pepper, then bake again for 15-20 minutes until eggs are set.
  8. Garnish with minced chives before serving.
