- 5–7 slices turkey slices
- 1 tbsp mustard powder
- Salt (to taste)
- Pepper (to taste)
- 1 tbsp olive oil
- 2 tbsp butter
Instructions
- Preheat oven to 400°F (200°C) to crisp the turkey slices.
- In a large pot, heat olive oil and butter over medium heat. Add leeks, broccoli stems, and potatoes; sauté for about 3 minutes.
- Stir in minced garlic, salt, pepper, and mustard powder; cook for another minute.
- Pour in the broth and water (1-2 cups based on desired thickness). Bring to a simmer for about 10 minutes until vegetables soften.
- While the soup simmers, place turkey slices on a lined baking sheet and bake until golden brown (10-12 minutes). Cool slightly before slicing.
- Blend the soup until smooth using an immersion blender or standard blender; return it to the pot and bring back to simmer.
- Stir in dried orzo; cook for about 5 minutes before adding broccoli florets and cream. Cook until orzo is tender (4-5 minutes).
- Mix in grated cheddar cheese until melted and creamy.
