  • 1/2 cup unsalted butter (113 g)
  • 3/4 cup light brown sugar (150 g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 2 cups all-purpose flour (250 g)
  • 3/4 teaspoon baking soda
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, cream together butter and brown sugar until light and fluffy. Mix in the egg and vanilla.
  3. In another bowl, combine flour, cocoa powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  4. In a separate bowl, prepare the chocolate chip cookie dough by creaming cold cubed butter with both sugars until fluffy. Add in the egg, egg yolk, and vanilla.
  5. Combine dry ingredients (flour, cornstarch, baking soda, salt) into the creamed mixture until just mixed in.
  6. Fold in chocolate chips for both doughs.
  7. Scoop out small balls of each dough, press them together to form larger balls, and place them on the prepared baking sheets about two inches apart.
  8. Bake for 8-9 minutes until edges are set but tops appear slightly underbaked. Cool on sheets for 5-10 minutes before transferring to wire racks.
