  • 1 cup cold unsalted butter
  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in cold butter until crumbly.
  2. Add vinegar and water gradually until dough forms. Refrigerate for at least 30 minutes.
  3. Melt butter in a saucepan over medium heat until golden brown, then let cool slightly.
  4. In another bowl, mix peaches, strawberries, sugar, cornstarch, lemon juice, and salt.
  5. Preheat oven to 375°F (190°C). Roll out half the dough for the bottom crust and place it in a pie dish.
  6. Pour in the fruit filling, then roll out remaining dough for the top crust.
  7. Brush with whisked egg and sprinkle with Turbinado sugar if desired. Bake for about 70 minutes until golden brown.
