  • ¾ cup heavy cream or coconut milk
  • 1 teaspoon sugar (optional)

Instructions

  1. Marinate chicken: Combine chicken with yogurt, lemon juice, cumin, coriander, paprika, turmeric, and salt. Let sit for 10–15 minutes.
  2. Cook chicken: Heat 1 tablespoon butter and 1 tablespoon oil in a skillet over medium-high heat. Add marinated chicken; cook until browned (5–7 minutes). Set aside.
  3. Make sauce: In the same skillet, sauté onions until soft (3–4 minutes). Add garlic, ginger, garam masala, and chili powder; stir for 30 seconds.
  4. Add tomato base: Stir in tomato paste and purée; simmer for 3–4 minutes.
  5. Incorporate cream & chicken: Pour in cream; return chicken to skillet; simmer until sauce is creamy (5–7 minutes).
