This easy recipe showcases tender imitation crab, seasoned sushi rice, and a variety of crunchy vegetables, all drizzled with a spicy mayo that elevates each bite.


Ingredients

  • 1 1/2 cups dry Calrose Sushi Rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • 8 oz imitation crab (chopped)
  • 1/2 cup diced English cucumber
  • 1 large avocado (sliced)
  • Nori sheets (chopped)
  • Black and toasted sesame seeds (for garnish)

Instructions

  1. Rinse the sushi rice in a mesh sifter until water runs clear.
  2. Cook the rinsed rice in a rice cooker with 2 cups of water.
  3. Once cooked, transfer rice to a rimmed baking sheet and drizzle with seasoned rice vinegar. Fold gently with a rice paddle and allow to cool.
  4. Mix Japanese mayonnaise and sriracha in a bowl for the spicy mayo.
  5. Chop imitation crab and dice cucumber while the rice cools.
  6. Assemble your bowls by layering sushi rice, imitation crab, cucumber, sliced avocado, spicy mayo, nori pieces, sesame seeds, and any additional toppings.
