- 1 1/2 cups dry Calrose Sushi Rice
- 2 cups water
- 1/4 cup seasoned rice vinegar
- 1/4 cup Japanese mayonnaise
- 2 teaspoons sriracha
- 8 oz imitation crab (chopped)
- 1/2 cup diced English cucumber
- 1 large avocado (sliced)
- Nori sheets (chopped)
- Black and toasted sesame seeds (for garnish)
Instructions
- Rinse the sushi rice in a mesh sifter until water runs clear.
- Cook the rinsed rice in a rice cooker with 2 cups of water.
- Once cooked, transfer rice to a rimmed baking sheet and drizzle with seasoned rice vinegar. Fold gently with a rice paddle and allow to cool.
- Mix Japanese mayonnaise and sriracha in a bowl for the spicy mayo.
- Chop imitation crab and dice cucumber while the rice cools.
