- 8 oz farfalle (bow tie pasta)
- 1 cup cherry tomatoes (halved)
- 1 cup fresh mozzarella balls (halved)
- 1/2 cup fresh basil leaves (thinly sliced)
- 5 strips thinly sliced turkey
- 3 tbsp extra virgin olive oil
- 1.5 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 1 garlic clove (grated)
- 1/4 tsp red pepper flakes
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F. Arrange turkey slices on a foiled baking sheet and bake for 10-12 minutes until crispy. Cool and chop.
- Boil water in a large pot and cook farfalle according to package instructions. Drain and rinse under cool water.
- Whisk together olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and black pepper in a small bowl.
- In a large mixing bowl, combine cooked pasta, chopped turkey, halved cherry tomatoes, mozzarella balls, sliced basil, and vinaigrette. Toss gently until well mixed.
