  • 8 oz farfalle (bow tie pasta)
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 5 strips thinly sliced turkey
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F. Arrange turkey slices on a foiled baking sheet and bake for 10-12 minutes until crispy. Cool and chop.
  2. Boil water in a large pot and cook farfalle according to package instructions. Drain and rinse under cool water.
  3. Whisk together olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and black pepper in a small bowl.
  4. In a large mixing bowl, combine cooked pasta, chopped turkey, halved cherry tomatoes, mozzarella balls, sliced basil, and vinaigrette. Toss gently until well mixed.
