  • 1 large tart apple (peeled and shredded)
  • ½ cup packed brown sugar (for caramel frosting)
  • 3 tablespoons butter (for caramel frosting)
  • 3 tablespoons apple juice (for caramel frosting)
  • 2 ⅔ cups powdered sugar (for caramel frosting)
  • ½ cup finely chopped toasted pecans (for caramel frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Mix in the egg and apple juice.
  3. In another bowl, whisk together the flour, baking soda, apple pie spice, and salt; gradually add to the wet ingredients until combined. Gently fold in the shredded apple.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet and bake for about 10 minutes or until edges are golden. Allow cooling on wire racks.
  5. For the caramel frosting, heat brown sugar with butter and apple juice in a saucepan until smooth. Gradually mix in powdered sugar.
  6. Once cookies are cooled completely, frost them with caramel frosting and top with toasted pecans.
