  • 3 ears of corn
  • 200g red grape tomatoes
  • 200g yellow grape tomatoes
  • 1 avocado
  • ¼ bunch cilantro (coriander)
  • 2 tbsp olive oil (divided)
  • 2 tsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat grill or grill pan over medium-high heat. Slice red onions into thick rounds and brush with olive oil on both sides.
  2. Grill corn and onions until charred (about 10-15 minutes), turning occasionally.
  3. Let them cool slightly, then cut kernels off the corn and chop the onions.
  4. In a mixing bowl, combine charred corn kernels, chopped onions, halved grape tomatoes, diced avocado, and cilantro.
  5. Whisk together olive oil, lemon juice, Dijon mustard, maple syrup, salt, and pepper in a small bowl.
  6. Pour dressing over the salad mixture and toss gently to combine before serving.
