Ingredients

Scale
  • 4 medium-sized apples (Granny Smith or Honeycrisp)
  • 1 tbsp lemon juice
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup crushed graham crackers
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash and core the apples, leaving the bottom intact. Drizzle lemon juice inside to prevent browning.
  3. In a mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add brown sugar, vanilla extract, ground cinnamon, and salt; mix well.
  4. Add sour cream and mix until fully combined. Fold in crushed graham crackers and chopped nuts (if using).
  5. Fill each apple with the cheesecake mixture and place them in a baking dish. Spoon any leftover filling around them.
  6. Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake an additional 10-15 minutes until tops are golden.
