Ingredients
- 12 ounces jumbo pasta shells
- 1 pound fresh spicy sausage (casing removed)
- 1 cup chopped broccolini
- 16 ounces pumpkin puree
- 1/4 cup water
- 1/4 cup whole milk ricotta cheese
- 1/2 teaspoon ground nutmeg
- 1/2 cup shredded cheese (Cabot Mac 'n Cheese)
- 1/2 cup shredded cheddar cheese (Cabot Seriously Sharp)
- 4 sage leaves, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (191°C). Prepare a 9×13-inch casserole dish.
- Bring a large pot of water to boil and cook jumbo pasta shells for about 7 minutes. Drain and transfer to an ice bath.
- In a skillet over medium heat, brown the spicy sausage, then add chopped broccolini until softened. Remove from heat and cool.
- In the same skillet, mix pumpkin puree, water, ricotta cheese, and nutmeg; stir until bubbly. Add both types of cheese and sage until melted.
- Assemble by pouring some sauce into the casserole dish, filling each shell with the sausage mixture, and topping with remaining sauce and cheese.
