- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Scrub the potatoes, pat dry, and pierce with a fork several times.
- Rub potatoes with olive oil and season with salt and pepper. Bake for 45 minutes until tender.
