- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel tomatoes
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry, uncooked)
- 2 cups shredded cheese (any variety)
Instructions
- In a large skillet over medium-high heat, heat olive oil. Add ground beef and diced onion; cook until the beef is no longer pink and onions are translucent (about 8-10 minutes). Drain excess grease.
- Stir in minced garlic and taco seasoning; cook for an additional 30 seconds until fragrant.
- Mix in beef broth, Rotel tomatoes, and tomato paste. Bring to a boil.
- Add rice; return to a boil then cover and simmer on low heat for about 15 minutes or until the rice absorbs most of the liquid.
