Ingredients
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup cherry juice
- 1/4 cup granulated sugar
- 2 tablespoons cherry preserves
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and chopped
- 1 package ladyfingers
- 1/4 cup cocoa powder
- 1/4 cup dark chocolate, shaved or grated
Instructions
- In a mixing bowl, combine mascarpone cheese and heavy cream; beat until smooth and fluffy.
- Add cherry juice and vanilla extract; mix until well combined.
- In another bowl, mix granulated sugar with cherry preserves; fold into mascarpone mixture along with chopped cherries.
- Dip ladyfingers quickly into remaining cherry juice and arrange them in a 9×13 inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers; layer more dipped ladyfingers on top followed by the remaining mascarpone mixture.
- Cover and chill in the refrigerator for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and sprinkle shaved chocolate on top.
