  • 1 lb boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 1 medium sized spaghetti squash
  • 3 cups broccoli florets
  • 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade)
  • 1/2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Halve the spaghetti squash lengthwise, remove seeds, coat with oil and salt, then place cut side down on a baking sheet.
  3. In a large casserole dish, combine diced chicken breasts, onion, olive oil, salt, and pepper; mix well.
  4. Bake both the spaghetti squash and chicken for about 30 minutes until cooked through.
  5. Dice the chicken and scrape out the squash strands into the casserole dish.
  6. Mix in broccoli florets and garlic Alfredo sauce until combined.
  7. Return to oven and bake for an additional 30 minutes until top is golden brown.
