  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 can (12 oz) evaporated milk or half and half
  • 1 quart (32 oz) chicken stock (+1 extra cup if using raw chicken)
  • 4 cups shredded cooked chicken (or 1.5 lbs raw skinless chicken breasts/thighs)
  • Fresh thyme, black pepper, salt
  • For Dumplings: 2 cups all-purpose flour
  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a large heavy-bottomed pot over medium-high heat, melt butter. Add onion, carrots, celery; sauté for about 5 minutes until softened. Stir in garlic for another minute.
  2. Add flour and mix well for about 1 minute. Gradually pour in evaporated milk and chicken stock while stirring continuously until smooth.
  3. If using raw chicken, add it along with an extra cup of broth or water; simmer for about 20 minutes until cooked through. Shred the chicken before returning it to the soup.
  4. If using pre-cooked chicken, bring the soup to a boil before adding shredded chicken along with thyme, pepper, and salt; reduce heat and let simmer uncovered while preparing dumplings.
