  • 1 lb boneless, skinless chicken breast
  • 2 cups shredded cabbage
  • 1 large carrot, julienned
  • ½ batch green onions, chopped
  • 12 oz uncooked chow mein noodles
  • 6 tbsp soy sauce
  • 3 tbsp light sesame oil (not toasted)
  • ½ cup chicken broth
  • 1 tbsp cornstarch
  • 1 tbsp granulated sugar
  • 3 tbsp oil
  • 2 garlic cloves, minced

Instructions

  1. Whisk together soy sauce, granulated sugar, light sesame oil, chicken broth, and cornstarch in a bowl; set aside.
  2. Cook chow mein noodles according to package instructions; drain and rinse with cold water.
  3. Heat 2 tablespoons of oil in a wok over medium-high heat. Cut chicken into strips and cook until golden brown (5-7 minutes). Remove and set aside.
  4. In the same pan, add remaining oil and sauté carrots, cabbage, and garlic for 3-4 minutes until softened.
  5. Return the chicken and noodles to the pan; pour in the sauce and stir well. Cook for an additional 2 minutes until heated through.
  6. Garnish with chopped green onions before serving hot.
