- 4 boneless, skinless chicken breasts
- 4 slices of chicken
- 4 slices of Swiss cheese
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- 2 tbsp olive oil
- 2 tbsp butter
- 1 cup milk
- 1 tsp Dijon mustard
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Use a meat mallet to pound each chicken breast to about ¼ inch thickness. Layer each breast with a slice of chicken and Swiss cheese. Roll tightly and secure with toothpicks.
- Mix flour with salt and pepper in a bowl. Dredge each roll in the flour mixture, dip in beaten eggs, then coat with breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Sear each roll until golden brown, about 2–3 minutes per side.
- Place seared rolls in a baking dish and bake uncovered for 20–25 minutes until internal temperature reaches 165°F (74°C).
- For the sauce, melt butter in a saucepan over medium heat, add flour, and cook for about a minute. Gradually whisk in milk until smooth, then stir in Dijon mustard and Parmesan cheese until thickened. Season with salt and pepper.
- Remove toothpicks from rolls, slice them into rounds, drizzle with sauce, and garnish if desired.
