  • 2 cooked and shredded chicken breasts
  • 2 bell peppers (sliced)
  • 1 large onion (sliced)
  • 8 oz cream cheese (room temperature)
  • 1 packet fajita seasoning
  • 8 oz shredded Monterey Jack cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13 casserole dish with non-stick spray.
  2. In a non-stick skillet over medium-high heat, add olive oil. Sauté the chicken, bell peppers, and onion for 1-2 minutes until slightly seared. Remove from heat.
  3. In the same skillet, mix cream cheese and fajita seasoning until melted. Stir in the sautéed mixture until everything is evenly coated.
  4. Transfer to the prepared casserole dish and top with shredded Monterey Jack cheese.
  5. Bake for about 20 minutes or until the cheese is golden and bubbly.
