  • 2 bell peppers (any color, thinly sliced)
  • 1 large sweet onion (thinly sliced)
  • 8 oz mushrooms (thinly sliced)
  • 6 Tablespoons vegetable oil (divided)
  • Seasoned salt
  • Cumin
  • Smoked paprika (optional)
  • Fresh lemon juice

Instructions

  1. Season the chicken strips with seasoned salt, cumin, and optional smoked paprika. Toss well.
  2. In a bowl, combine sliced bell peppers, onion, and mushrooms.
  3. Heat 1-1/2 tablespoons of oil in a skillet over high heat until smoking.
  4. Sauté one-third of the vegetables until seared and crisp-tender; remove and repeat with remaining vegetables.
  5. In the same skillet, add remaining oil and chicken strips along with lemon juice; cook until done.
  6. Return all cooked vegetables to the skillet; toss together to heat through.
