  • 2 cups cooked shredded chicken
  • 6 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely diced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste
  • Optional: bay leaf, dried thyme, tomato paste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots; cook for about 5–6 minutes until softened. Stir in garlic and cook for another minute.
  2. Pour in the chicken broth along with the bay leaf and season with salt and pepper. Bring to a boil, then reduce heat to simmer for about 10 minutes.
  3. Add pastina pasta into the simmering broth and cook according to package instructions (about 6–8 minutes).
  4. During the last minute of cooking, stir in the shredded chicken to warm through. Remove from heat and mix in grated Parmesan cheese and chopped parsley before serving hot.
