  • 1 pound diced boneless skinless chicken breasts
  • 3 packages instant ramen noodles (3-ounce packages)
  • 3 tablespoons vegetable oil (divided)
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • ½ cup diced sweet yellow onion
  • 1 cup broccoli florets
  • 3 tablespoons regular soy sauce
  • 1 tablespoon rice apple vinegar
  • 2 teaspoons sriracha

Instructions

  1. In a mixing bowl, whisk together the soy sauces, rice vinegar, sriracha, and set aside.
  2. Cook instant ramen noodles in boiling water for 1-2 minutes; drain and rinse with cold water.
  3. Heat 1 tablespoon vegetable oil in a nonstick skillet over medium-high heat; cook the chicken until fully cooked, then remove.
  4. In the same skillet, add remaining oil and sauté bell pepper, mushrooms, onion, and broccoli until tender.
  5. Add minced garlic and ginger; cook for another minute before returning chicken to the skillet.
  6. Mix in cooked noodles and sauce; toss until well combined.
  7. Serve hot, garnished with green onions if desired.
