Ingredients
- 1 tablespoon ghee or butter
- 1 small onion, chopped
- 3–4 garlic cloves
- 2-inch piece of ginger, chopped
- 15 fresh cilantro stalks (stems and leaves separated)
- 1 bay leaf
- 1–2 Kashmiri dried chilies
- 8 black peppercorns
- 1 lb bone-in skinless chicken thighs & drumsticks
- 4 cups warm water
- 1/4 teaspoon garam masala
- 1/2 teaspoon fresh cracked black pepper
- 1 tablespoon heavy cream or 1/4 cup milk (optional)
- Lemon slices for serving
- Chopped scallions for serving
Instructions
- In a large pot, melt ghee over medium heat.
- Sauté onion, garlic, ginger, cilantro stems, and whole spices for about 1 minute.
- Add chicken pieces; sear lightly for about a minute on each side. Sprinkle salt and add enough water to cover.
- Bring to a boil, then reduce heat to low. Cover and simmer for 35 to 45 minutes.
- Use a colander to strain the soup; remove chicken pieces to shred them after cooling.
- Return soup to pot; add shredded chicken, cilantro leaves, garam masala, and black pepper. Simmer gently for another 5 minutes.
- Serve warm with lemon slices and scallions.
