Ingredients

  • 1 tablespoon ghee or butter
  • 1 small onion, chopped
  • 34 garlic cloves
  • 2-inch piece of ginger, chopped
  • 15 fresh cilantro stalks (stems and leaves separated)
  • 1 bay leaf
  • 12 Kashmiri dried chilies
  • 8 black peppercorns
  • 1 lb bone-in skinless chicken thighs & drumsticks
  • 4 cups warm water
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon fresh cracked black pepper
  • 1 tablespoon heavy cream or 1/4 cup milk (optional)
  • Lemon slices for serving
  • Chopped scallions for serving

Instructions

  1. In a large pot, melt ghee over medium heat.
  2. Sauté onion, garlic, ginger, cilantro stems, and whole spices for about 1 minute.
  3. Add chicken pieces; sear lightly for about a minute on each side. Sprinkle salt and add enough water to cover.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 35 to 45 minutes.
  5. Use a colander to strain the soup; remove chicken pieces to shred them after cooling.
  6. Return soup to pot; add shredded chicken, cilantro leaves, garam masala, and black pepper. Simmer gently for another 5 minutes.
  7. Serve warm with lemon slices and scallions.
