- 10–12 bone-in skinless chicken thighs
- 3 quarts cold water
- 1 tablespoon olive oil
- 2 yellow onions, peeled and diced
- 8 large carrots, peeled and chopped
- 6 ribs celery, chopped
- 5 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- Juice from one lemon
- 2 bay leaves
- Fresh chopped parsley for garnish
Instructions
- In a large stockpot, add chicken thighs and pour in cold water. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes.
- Meanwhile, heat olive oil in a Dutch oven over medium heat. Add onions and cook until translucent (4-5 minutes). Stir in carrots and celery; cook for an additional 10-15 minutes. Add garlic, salt, pepper, and bay leaves in the last two minutes.
- Strain the broth from the stockpot into the Dutch oven with cooked vegetables.
- Shred the cooled chicken and return it to the pot along with lemon juice. Bring to a boil again, then lower heat and simmer for another 30 minutes.
- Adjust seasoning before serving; garnish with fresh parsley.
