Ingredients

  • 2 medium zucchini, thinly sliced
  • 3 cups fresh spinach, chopped
  • 2 cups marinara sauce
  • 9 oven-ready lasagna noodles
  • 1 cup dairy-free mozzarella cheese
  • 1 cup crumbled tofu
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine crumbled tofu, nutritional yeast, garlic powder, lemon juice, salt, and pepper. Mix until creamy.
  3. In a baking dish, layer marinara sauce at the bottom. Add three noodles on top.
  4. Spread half of the vegan ricotta over the noodles and layer with zucchini slices and spinach.
  5. Repeat layers until all ingredients are used.
  6. Top with remaining marinara sauce and sprinkle with dairy-free mozzarella cheese.
  7. Cover with foil and bake for 35 minutes; remove foil during the last five minutes.
  8. Allow to cool slightly before slicing and serve hot.
