- 2 medium zucchini, thinly sliced
- 3 cups fresh spinach, chopped
- 2 cups marinara sauce
- 9 oven-ready lasagna noodles
- 1 cup dairy-free mozzarella cheese
- 1 cup crumbled tofu
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine crumbled tofu, nutritional yeast, garlic powder, lemon juice, salt, and pepper. Mix until creamy.
- In a baking dish, layer marinara sauce at the bottom. Add three noodles on top.
- Spread half of the vegan ricotta over the noodles and layer with zucchini slices and spinach.
- Repeat layers until all ingredients are used.
- Top with remaining marinara sauce and sprinkle with dairy-free mozzarella cheese.
- Cover with foil and bake for 35 minutes; remove foil during the last five minutes.
